Lemon Mascarpone Cake

 

I like simple cakes and this one is superb!     A nice lemony cake made moist by the addition of mascarpone.      It’s like the LBD of cakes — you can dress up or down!

 

1 ½ c. flour
½ t. Baking powder
¼ t. Salt
3 eggs
⅔ c. powdered sugar
½ c. butter, melted
7 oz. mascarpone*
½ t. Vanilla
Zest and juice of 1 lemon

 

Heat oven to 350.    Grease and flour a loaf pan (I like to put a piece of parchment in the bottom)

 

Mix flour, baking powder and salt together in a bowl.    In the bowl of your electric mixer, beat together with whisk attachment, the eggs and powdered sugar until creamy.      Add the melted butter and the mascarpone and beat on low. Add the vanilla and the lemon zest and juice.
Add flour mixture and beat slowly until the flour is all incorporated.

 

Pour batter in the prepared pan.     Bake 40 to 50 minutes or until a knife inserted in the middle comes out clean.

 

*My container of mascarpone was 8 ounces so I used the full carton.

Post Service Officer Myra Jowers will no longer hold office hours on Tuesdays at Memorial Hall. She will meet with anyone, by appointment, who has questions about filing VA claims, who need a second set of eyes to review their claims or help understand VA documents they have received in the mail. Her service is free and is for anyone, Veteran or family member, who wish to file a claim or appeal a denied claim. She can be reached at [email protected] or 620.215.1286 to schedule an appointment.

 

Our Post 25 American Legion Oratorical competition is Saturday, January 26, 2019. The competition starts promptly at 9 am and will be held at the First Southern Baptist Church. All Post 25 members, their families and friends of the Legion are invited to attend. The winner of the Post Oratorical competition will move on to the District oratorical competition to be held in February in Olathe.

 

The first shuttle run for the Fort Scott/Topeka VA Medical Center is Tuesday, February 5. The shuttle will run every Tuesday morning. Any area Vet needing a ride for a medical appointment should call 785-925-0261 for more information or to reserve a seat. All Vets riding the shuttle must have medical appointments between 9 am and 1 pm. The deadline for scheduling a seat is 5 pm, Monday, February 4. 

I am proud to announce that once again Fort Scott American Legion Thompson-Harkey Post 25 leads the Department of Kansas in membership this week. Our 2019 goal was 51 members. Our current membership is at 130% and 67 members. We are 16 members over our goal. By way of comparison, Grainfield Post 301 in District 6, is in 2nd place for membership at 115%. Thanks to all members who have made Fort Scott Post 25 a highly visible and active Legion Post in the Department of Kansas.

January 26. Post 25 Oratorical competition at 9 am at the First Southern Baptist Church.

January 31. Post 25 Executive Committee meets in Memorial Hall at 6 pm. Post 25 is member driven. Please make Post 25 Executive Committee members aware of any suggestions or thoughts you may have about improving  Post 25.

February 1-3. The Mid-Winter Forum is open to all Legionnaires and offers every member, especially Post leaders and chairmen, the opportunity to learn more about The American Legion, its programs and the direction each program is expected to take if there are any changes being considered, including changes directed by National Headquarters.  In addition, the Forum provides information about how and why The American Legion functions in the manner we do as an organization. Obituary for Jack Leroy Colvin

Jack Leroy Colvin

Jack Leroy Colvin, age 82, resident of Garland, KS, died Friday, January 18, 2019, at his home. He was born January 9, 1937, in Ft. Scott, KS, the son of Gene and Maurine Carson Colvin.

He graduated from Uniontown high school with the class of 1954. Jack married Shirley Richmond in 1962 in Miami, OK.

Jack worked several jobs throughout his life, mostly in pest control. He was an avid sportsman, raising dogs which won several competitions. He was a big Kansas City Chiefs fan and enjoyed collecting coins. Jack could be ornery on occasion and even a little stubborn, never afraid to tell it like it was. He loved spending time with his family.

Survivors include his wife Shirley of the home; four daughters, Jacque Colvin Doty, Ft. Scott, Patrice Flanagan and husband Pat, Carthage, MO, Donna Truitt and husband David, Hutchinson, KS, and Pam Colvin Hagerman, Garland, KS; two sisters, Donna Carrington, Overland Park, KS, and Sharon Ashcraft and husband Dave, Ft. Scott; 12 grandchildren, Brooke, Brad, Brittany, Brian, Rodney, Orion, Kayla, Tabetha, Crystal, Chris, Calli, and Dalton; and 13 great-grandchildren.

He was preceded in death by two sons, Michael and Terry Colvin; an infant sister, Karen Colvin; and his parents.

Pastor Rick Womack will conduct funeral services at 2:00 PM Friday, January 25th, at the Cheney Witt Chapel.

Burial will follow in the Clarksburg cemetery.

The family will receive friends from 6:00 until 8:00 Thursday evening at the Cheney Witt Chapel.

Memorials are suggested to the Jack Colvin Memorial Fund and may be left in care of the Cheney Witt Chapel, PO Box 347, 201 S. Main, Ft. Scott, KS 66701. Words of remembrance may be submitted to the online guestbook at cheneywitt.com.

Death Notice For Penny Osborne

Penny Louise Osborne, age 63, a resident of Mound City, Kansas, passed away Wednesday, January 16, 2019, at the Denver International Airport in Denver Colorado.

At the time of her death, Penny was traveling to Arizona to visit her daughter.

Funeral services will be held at 10:30 A.M. Friday, January 25th at the Pleasanton Assembly of God Church.

Burial will follow in the U. S. National Cemetery.

Memorials are suggested to the American Diabetes Association and may be left in care of the Cheney Witt Chapel, 201 S. Main, P.O. Box 347, Ft. Scott, KS 66701.  Words of remembrance may be submitted to the online guestbook at cheneywitt.com.

Obituary of Glen Defebaugh

Dr. Glen Albert Defebaugh, age 77, resident of Nevada, MO, formerly of Ft. Scott, KS, passed away Thursday morning, January 17, 2019, at his home, following a courageous battle with cancer.

He was born September 27, 1941, in Nevada, MO, the son of Charles Albert and Mary Mildred Vetter Defebaugh. He graduated from Nevada high school with the class of 1959. He then graduated from Fort Scott Junior College in 1961.

He married Linda Leonard on September 3, 1961, in Fort Scott. Glen received his Doctor of Chiropractic degree from Palmer College in 1964. He served the community of Ft. Scott for nearly 40 years as a Chiropractor. He donated his services as team physician for FSCC football through the 1970’s and traveled with the team.

Glen had a great sense of humor. He enjoyed traveling and vacationing with his family. There were many fishing trips with the boys and skiing trips with the girls. He and Linda wintered in South Texas for many years. He liked to fish, golf, and play guitar. He loved attending all the kids and grandkids sporting events and activities through the years.

Survivors include his wife Linda of the home; two daughters, Teresa Ivey and husband John, Wichita, KS, and Cheryl Eason and husband Curt, El Dorado Springs, MO; three sons, Brian Defebaugh and wife Shelby, David Defebaugh and wife Michelle, and Douglas Defebaugh and wife Tonya, all of Ft. Scott; 16 grandchildren; and 23 great grandchildren. He was preceded in death by his parents.

There was cremation. Rev. Dr. Jared Witt will conduct memorial services at 10:00 A.M. Monday, January 21st, at the Cheney Witt Chapel.

Burial will follow in the Deerfield, MO Cemetery.

The family will receive friends from 1:00 until 3:00 Sunday afternoon at the Cheney Witt Chapel.

Memorials are suggested to either Shriner’s Hospital or St. Jude’s Hospital and may be left in care of the Cheney Witt Chapel, PO Box 347, 201 S. Main, Ft. Scott, KS 66701. Words of remembrance may be submitted to the online guestbook at cheneywitt.com.

Obituary of Deryl Layton

Deryl Lee Layton, age 74, a resident of Ft. Scott, Kansas, passed away Monday, January 14, 2019, at the Medicalodge of Ft. Scott.

  He was born June 18, 1944, in Wichita, Kansas, the son of Orville Layton and Clestine Mayfield.

  Deryl graduated from the Ft. Scott High School with the Class of 1962.  He later graduated from Pittsburg State University in 1966 with a degree in accounting.  Deryl had worked in various restaurants in both Ft. Scott and Olathe.

In later years, he volunteered with the Beacon.  Deryl enjoyed gardening and tending his flowers.  He also liked cars and reading.

Survivors include a half-sister, Susan Thurman, of Girard, Kansas and a half-brother, Kent Layton, of Kansas City, Kansas.  Also surviving are several nieces, nephews and cousins.  He was preceded in death by his parents and his step-mother, Pat Layton.

Funeral services will be held at 2:00 P.M. Monday, January 21st at the Cheney Witt Chapel.

Private burial will follow in the Clarksburg Cemetery.

The family will receive friends on Monday from 1:30 P.M. until service time at the Cheney Witt Chapel.

  Arrangements are under the direction of the Cheney Witt Chapel, 201 S. Main, Ft. Scott, Kansas.  Words of remembrance may be submitted to the online guestbook at cheneywitt.com.
